Taco Biscuit Cups and Guacamole (Post 207)

Here’s a couple of great recipes to add to your ten cent crazy book for Cinco de Mayo or any day

Taco Biscuit Cups

Preheat oven at 375 degrees
Brown
1 and a half pounds of ground chuck (drain)
add
1 pkg taco seasoning mix
Half a cup of salsa
grease muffin pan
open and separate 1 large can of biscuits
press each biscuit into the bottom and
up the sides of muffin cups
Scoop beef mixture into cups
Top each with shredded Cheddar Cheese

Bake 13 to 15 minutes- until biscuits are golden
And cheese is melted
Serve with shredded lettuce, chopped tomatoes, sour cream and guacamole

Guacamole

You will need:
4 ripe avocados
1 lime
Half an onion (chopped)
2 teaspoons of garlic
2 radishes (chopped)
2 tomatoes (chopped)
1 teaspoon cumin
1 teaspoon salt
1 diced jalapeno (optional)

Slice avocados in half – remove seeds
And scoop out flesh
Squeeze juice from lime over avocados
Mash together with fork
Add all other ingredients
set aside at room temperature for 1 hour

Serve with corn tortilla chips or vegetables

Sloppy Joe Biscuit cups

Preheat oven at 375 degrees

Brown
1 pound of ground chuck
With
One-fourth cup of frozen chopped onions
One-fourth cup of frozen chopped bell peppers
2 teaspoons of garlic
(Drain)
Now add to beef mixture:
One-fourth cup of ketchup
1 teaspoon Worchester shire sauce
One-eighth a teaspoon of pepper
1 tablespoon of brown sugar
Grease muffin pan
Open and separate 1 large can of biscuits
press each biscuit into the bottom and
up the sides of muffin cups
Scoop beef mixture into cups
Top each with shredded Cheddar Cheese

Bake 13 to 15 minutes- until biscuits are golden
And cheese is melted

Serve with sour cream
