Potato Pockets (Post 92)

Well, here's another easy recipe to add to your ten cent crazy book

Potato Pockets

Preheat oven at 375 degrees

Make 4 servings of instant mashed potatoes (follow directions on box)

Mix into potatoes
3 oz of cream cheese (place in the middle of hot instant potatoes)
let cool while cheese melts - about 15 min
Then mix in
three fourths of a cup of chopped up ham (half of a 10 oz package of honey ham lunch meat chopped up
2 finely chopped up green onions
one fourth of a cup of bacon bits
one fourth of a cup of shredded cheddar cheese

Open one can of 8 crescent rolls
Spread out each crescent roll and spoon 1/3 cup of potato mixture into each roll (if you spray your 1/3 cup measuring cup with oil - potato mixture will come out in a nice little cup shape - and you can wrap the crescent roll around the outside nicely
Bring corners together around potato mixture and press gently to seal dough
Place on baking sheet - brush melted butter on top of each
Bake for 10 to 14 minutes until golden brown
