Recipes (Post 17)

Here are a few recipes to add to your ten cent crazy book. Remember I am not now and will never claim to be a cook.

Apple and Cheese Sandwiches

Mix
1 can apple pie filling (chopped up)
1 tablespoon brown sugar
1/8 tsp of nutmeg
1/2 tsp cinnamon
3 tablespoon chopped pecans
2 tsp melted butter
1 tablespoon raisons(more if you like raisons-none if you don't)
(heat mixture in microwave until hot-about 1 minute)

Toast 8 slices of raison bread and spread cream cheese on top, sprinkle with powdered sugar

Now spoon Apple mixture on top of powdered sugar and top each piece with a slice of cheddar cheese - microwave each slice until cheddar begins to melt.
Serve hot. Great for a Saturday morning breakfast.

Carrot Cake

2 cups self-rising flour
2 cups sugar
2 tsp cinnamon
1/8 tsp nutmeg
1 and 1/3 cups of oil
3 cups shredded carrots (about 6 med carrots)
1 cup chopped pecans
1/ cup raisons

Bake at 350 degrees for 45 min or until done

Frost with cream cheese icing, I buy this in a can, but if you know how to make your own - go for it.

Peanut Butter Cookies

Mix at Med speed
3/4 cups of peanut butter
1/2 cup of oil
1 and 1/4 cups light brown sugar
3 tablespoons milk
1 tablespoon vanilla

Then add
1 egg
1 and 3/4 cups flour
Make into small balls and press to flatten slightly with fork

Bake at 375 degrees until light brown, about 7 or 8 min

Chocolate Truffles

Mix
3/4 cup of powdered sugar with 1 can chocolate fudge icing and 1 tsp vanilla

Drop by the teaspoon onto a plate, sprinkle with cocoa powder
put in the refrigerator for 30 minutes. Truffles are done. (Really!)

Cheesy Chicken and Rice

Mix
1 can of cream of chicken soup
1 can of cream of mushroom soup
1 and 1/3 cups of water
3/4 cup of rice
1/2 tsp of onion powder
1/4 tsp of pepper
2 cups frozen vegetables
Put in baking dish
Top with 4 skinless/boneless chicken breast.
Cover and bake at 375 degrees for 45 min
Sprinkle with cheese and put in oven until cheese melts
