National Pancake Day (Post 172)

Did you know that Feb. 24th is National Pancake Day? Here's some fun facts and some great pancake recipes to add to your ten cent crazy book.

Well, since 1950 the people of Liberal, Kansas, and Olney Kansas have held the "International Pancake Day" race between the two towns. The two towns' competitors race along an agreed-upon measured course. The times of the two towns' competitors are compared, to determine a winner overall. A similar race is held in North Somercotes of Lincolnshire in eastern England.

The contestants, traditionally women, carry a frying pan and race to the finishing line while tossing the pancakes as they go. The winner is the first to cross the line having tossed the pancake a certain number times.

The tradition is said to have originated when a housewife from Olney, England
in 1445 was so busy making pancakes that she forgot the time until she heard the church bells ringing for the service. She raced out of the house to church while still carrying her frying pan and pancake.

International Pancake Day is celebrated on Fat Tuesday which will fall on Mar. 8th this year. Either day of celebration makes for an excuse to have some great pancakes. Here are some recipes for your ten cent crazy book.

Good Old Fashioned Pancakes

Mix
1 and a half cups of self-rising flour
1 tablespoon of sugar
1 and a forth cups of milk
1 egg
3 tablespoons melted butter

Scoop one forth of a cup of batter into lightly oiled frying pan. Brown on both sides and serve hot with maple syrup.

Chocolate Chip Pancakes

Mix
1 and a half cups of self-rising flour
3 tablespoons of sugar
2 eggs
8oz of sour cream
1 cup of milk
One forth of a cup of melted butter
Half a cup of chocolate chips

Scoop one forth of a cup of batter into lightly oiled frying pan. Brown on both sides and serve hot with whipped cream and raspberry syrup or traditional maple syrup.

Banana Pancakes

Mix
1 cup self-rising flour
1 tablespoon sugar
1 egg
1 cup of milk
2 tablespoons melted butter
2 ripe mashed bananas

Scoop one forth of a cup of batter into lightly oiled frying pan. Brown on both sides and serve hot with maple syrup.
