Kitchen Hints (Post 216)

Here are some fun kitchen hints to add to your ten cent crazy book

Watery Soup – mix together, one tablespoon of butter and some flour – whisk it into the soup

If something is to salty add sugar

If your coffee is bitter, add a pinch of salt

If you don’t know how old your eggs are – put them in a bowl of water – a rotten egg will float to the top

Do you have any plastic bowls with lids? – Fill them half full of water and keep lettuce or celery in them – it will stay fresh and crispy in the fridge for what seems like forever

Is your chili to spicy? – add a can of crushed pineapple

Is your sauce to sweet? – add a little lemon juice

Hard cookies – wrap them in a paper towel with a few slices of apple and microwave for about 5 seconds

When measuring anything sticky (syrup, honey etc.) spray your measuring cup or spoon with oil, everything will slip right out and you will get every drop

Each year, I teach at least one person to core lettuce – this to me is amazing. When you get home with that next head of lettuce, remove it from the package - remove the outside leafs and bang the hard flat core side onto a table or kitchen counter – probably just once, maybe twice, - you will probably feel it break – Now turn the lettuce over and with your thumb and fingertips – twist the core – it should come right out – and the whole rest of the head of lettuce can be cut up and used – of course put it in your plastic bowl of water – in the fridge and it will last until you need it.

RECIPES (Post 214)

Here are a few new easy recipes that I’ve been making that you can add to your ten cent crazy book.

FRENCH ONION DIP BURGERS

Mix about 2 cups of frozen chopped onions and peppers into about one pound of hamburger meat.

Should make 5 or 6 good size burgers.

Cook burgers until almost done and then remove from frying pan.

Pour two cans of French Onion soup into pan along with a cup of chopped onions and peppers, and then place hamburgers into soup to finish cooking.

When burgers are done put them on toasted buns / cheese and condiments optional.

Now pour soup mixture from pan into bowls and serve on the side to dip sandwiches in (really delicious)

CINNAMON TOASTED ROLL UPS

Mix one 8oz pkg of softened cream cheese with one cup of sugar.

Take several slices of bread and cut the crust off. Smash bread flat with your hands.

Spread Cream Cheese mixture on slices of bread –roll up and place on butter sprayed cookie sheet.

Spray bread roll-ups with butter spray and sprinkle generously with cinnamon sugar.

If you don’t have cinnamon sugar – make your own by adding two tablespoons of sugar to every one tablespoon of cinnamon.

Bake at 350 degrees until the cheese begins to melt out from roll-up.

SAUSAGE BALLS

Mix in bowl with hands – one pound of sausage – two cups of shredded cheddar cheese and one cup of Bisquick.

Will make about 50 to 60 sausage balls.

Place on sprayed cooking sheet. Bake at 350 degrees for 20 minutes – take out – turn over and bake another 20 minutes.
